How Do I Refrigerate/freeze With Royal Accents?

HI I am make a cake and I want to use the Strawberry filling recipie but it says that the cake needs to be refigerated if that is used and I am also usinf royal icing flowers on this cake because I am in the Wilton course #2 and this is our final cake. Do you think that I would be able to put this cake in the frige so that it does not go bad? Or should I take off the flowers and then freeze the cake and then whe I am ready put the flowers back on? When the butter cream icing touches the royal icing flowers will that ruin them? Please help thanks Jen

I don't know if your strawberry filling recipe uses fresh strawberries. If so, it would be good for about 2 days in the fridge. If the strawberries are fresh and you put it in the freezer, they will turn to mush when you thaw out the cake.

If however this is a cooked filling, you gain much more lattitude with length of storage time and you should be able to freeze it. HTH

not there yet myself but i would not put the flowers on till you are ready to take the cake into final class. they will get gummy in the fridge i would think.
