Help!! Smoothing Icing?

I can't seem to get my icing smooth. I have used the crusting cream cheese icing and buttercream icing. i need any tips. I am new at cake decorating and having loads of fun(other than my icing mishaps) icon_cry.gif

Please help me

If you do a search on smooth icing you fill find the VIVA method and the hot knife trick. Both very good! Also an article on upside down icing.

I have recently started using trowel that are normally used for spreading spackle and other hardware stuff. I love them!! It has greatly improved my ability to smooth the icing. HTH!!

Thanks for the tips. How long after icing the cake should I smooth the icing.

I'm going to have to try the trowel technique. I really stink at smoothing icing! Have tried the Viva thing and the hot spatula method and never like what I end up with.

I live in Mississippi, and if it is as humid and hot in Texas as it is here right now, you might want to try the all-Crisco buttercream. It has always been easier to smooth for me. I have to let buttercream with butter in it sit for a longer time than the all-Crisco. I can usually smooth it after a couple of minutes or almost immediately. The easiest way I learned to do it was the Viva paper towel method.

In Chandler.....weeks...the air is soooo humid in East Texas.....I have property south of Rusk.....
Honestly, long enough to throw your dirty dishes in the dishwasher, go to the little girls room & grab a cool drink with your feet up. 20 minutes, maybe.

After decorating for 6 years on and off I finally figured out how to make the hot knife trick work! Yeah me! After I ice the cake using the icer tip, then smoothing with a spackle thingy I let the cake sit for about 10 min. then microwave some water, dip my long spatula in, shake off the excess AND this is the part I just figured out-BARELY touch the cake with the hot damp knife to smooth.

Keep praticing and see what works best for you!
