sorry if this is a repeat question but I was wondering how long you can leave a cake unfrosted before it gets too dry? I usually crumb coat mine in 1-2 hours after they have cooled off but I was wondering if you waited longer, let's say 6-7 hours would it start drying out. thanks icon_redface.gif

I have left mine covered with a towel overnight and had no problems. You can also wrap them with saran wrap -- that is what I did with cakes I made last night that I will be decorating tonight.

Overnight would be my answer

I actually just tried this "trick" last night (my "cake teacher" taught). Baked my cake on Wednesday night, wrapped it in plastic wrap while it was still warm and put it in a clean plastic trash bag and sealed it. I crumb coated it last night. I was actually very surprised how moist it was. thumbs_up.gif

Here is a trick my mother-in-law taught me. It has allowed me to make the cakes ahead of time when it was convenient and still have a moist cake when it is time to decorate. After the cake is baked and cooled and put on the board, wrap it completely in plastic wrap and tin foil and put it in the freezer. I have done this as early as 3-4 days ahead of time. Pull it out of the freezer with enough time before decorating for it to unfreeze (a few hours), but do not unwrap it until you are ready to frost. As it unfreezes, all of the moisture from freezing will stay in the cake. I have never had a problem with a dry cake and actually have had people comment about how moist it is. Being able to make the cake ahead of time without sacrificing quality has definitely made life easier for me. [/b][/u]
