Can I use a cream cheese frosting under fondant?
and
Do I crumb coat only, or how thick of frosting do you use under fondant?

I haven't tried it, but I don't see why not. Make sure you keep it in the fridge, though, although it can set out for many hours before serving.

If you put the fondant in the fridge, won't it get condensation on it when you take it out?

I've done several cakes with cream cheese icing under fondant and it's fine. I just keep it in the fridge until i deliver it and then tell them to keep it cool until a few hours before they want to serve it.

I did a crumb coat and then a little thicker layer but the thing is my cream cheese icing doesn't harden so I had to put it in the freezer to harden before I put the fondant over it. HTH
