Oaky, so I am thinking of buying some of these pans off this site but now I cannot decide if I should buy the 2" or 3" deep pans. I am looking at buying some rectangular ones, which do you all use more?

I prefer the 2 inch pans. I can't seem to get a cake to cook throughly in the 3" pan. icon_cry.gif

I am a 2in person. I collar my pans and get nice high tiers that I don't seem to have some of the issues that I've read about people having with 3in pans. I love like round pans for basic everyday use and love the magic line pans. I'd throw out all my wiltons if I could and replace them with magic line if I could!

I love Magic Line & wish all my round pans were ML. I use the 3 inch, and wish ALL my round pans were 3 inch! My squares are 3" & I just think they come out better! I was surprised to read your first two responses, maybe it has something to do with the climate, or our ovens... I have had absolutely NO problem with 3" pans. I have a 9x3" pan, and when a customer orders a 9x4" cake, I use that pan, and after filling & frosting, it's 4" high, I bake once instead of using the 2" pans. I guess we all have to decide for ourselves, and if you end-up not liking what you get - sell it on ebay? Good luck!

OCakes,

So, you never have a problem with the cake baking through all the way? Do you use a heating core or baking strips or anything?

To bake in 3", I lower the baking temp 25 degrees and bake a bit longer. Also, hint from my mother, use a flower nail in the center of your cake. Will help it bake in the center - and pop right out - easier than the core.

I am going to have to try this because I am about to toss my 6x3 and 8x3 round pans in the trash bin!

Ditto.

I love my ML 3" square set. Wish all my pan were this configuration. Working on it. With Wilton, I have to use baking strips to get the cake to come out right.

I'm converting my pans slowly but surely over to the Magic Line pans.

The ML pans are "lifetime" quality. Most others are considered "disposable."

I cannot say enough about the quality and ease of baking with these. VERY WELL WORTH THE $$!

I just got a set of ML 3" rounds from cooksdream.com and they were really reasonable and I LOVE THEM!!! I had to cook them a little longer but I really like my pans. I didn't know until they came that they were Magic Line and when I used them they worked beautifully. I am going to try that trick with the flower nail in the center.

knoxcop1 = Yes, I agree, they are considered "lifetime", and the others are not, the dent & scratch easier.

regymusic = "if you bake it, they will come" - that is GREAT & SO TRUE! Ha ha! =)
