Help!! Need Ideas For Purse Cake!!

I need some help! I have an order for a purse cake due this Friday. The lady said her daughter loves Coach purses and her favorite color is pink. I wanted to stack the cake and make it 3-D but I have never sculpted a cake before. I have also never dealt with Fondant before. I do not want to do both for the first time on one cake. So I plan to make an 11x15, cut it like a purse, ice it in buttercream and make fondant details. The problem it, how do I cut it? Here are pictures of some purses I have in mind. Please help!! I would actually make 2 sheet cakes and stack them on top of one another and freeze. Then carve away at the edges.

That sounds great, but how would I cut it? Vertically or horizontally?
