Okay ya'll got a slight problem. I have a wedding cake to do for the 2nd of july and guess where I am at? In the Middle GA area and its going to be about 90 degrees in the shade. The wedding is going to get started at 11 am and this is my first wedding cake order and I want everything to go great for the bride but I want it to go smooth for me too. HELP icon_cry.gif

I can definitely sympathize! By July it will be at least 90 degrees in the shade here in Texas too, maybe higher...I can hardly wait!

Sorry, I don't have any real help for your problem, about all I could suggest would be not using any dairy products at all! Will you have to set up outside? I'm sure some more experienced members will be here to help soon. Janice

Make Sure that the venue has a fridge with enough space for the cake. Or a cool place that's not hot. Keep the cake in the fridge until you are about to deliver. Make sure there is no direct sunlight with the cake or you will have the leaning tower of Piza. If the cake is going to be outside try the swiss merigue buttercream, I think I read somewhere that it holds better in the heat. I would not recommend sitting outside, it is extremely hot here in the summer and it will melt. The cake is okay outside for a little bit, but then you hae the whole issue of moving it, again icon_confused.gif

Good luck! Hope this helps.

I only live about 10 min from the reception area and yes I have to set it up and all. It will be inside a screened in porch type thing. So there won't be no direct sunlight hitting the cake. Wish me luck this is my first wedding cake and I am still trying to figure out when to start the cake. The wedding is July 2nd. Its not too difficult so I believe I will be able to do it I will make sure I take plenty of pictures.
