i am sitting here planning my daughter's baptism cake for next month and i have decided that i want white chocolate and regular chocolate cake layered and filled with some kind of cheesecake filling. any tips on something good. i am going to have to take your word as i will probably not have time to test it first. i looked in the recipes but i wish there was a comment area on them so that the people that voted could give their 2 cents. i don't trust just a score.

I beat heavey whipping cream ( the small carton, not sure maybe a cup or more) with 1/3 c granulated sugar until nice and thick. Then fold in one package dry cheesecake instant pudding. I use this a lot! It is really good with yellow cake,a thin layer of buttercream, a layer of strawberry jam, and then the cheesecake filling.

The cheesecake pudding/heavy cream is always very good! Last year for my bday cake, I baked a thin cheesecake (w/o crust) and sandwiched it between two cake layers. Mmmm

The wedding Dress cake I just finished this weekend for a family bridal shower had a 1" layer of home-made cheesecake with no crust for the filling. It was sooooo good. I had never done that before but I will definately be doing it again. Everyone at the shower loved it.

HTH,
Amanda
