Hello everyone! I have been asked to make a cake for the 4th of July. Now I don't really need help with the decorating part, but what flavors to make it. It is for a lady at my work who I think is pretty classy. She has been to Wedding fairs lately and has tried all the wonderful fillings and cake flavors. I have usually just done the buttercream (white or choc)...so does anyone have a cake that would just knock her socks off? Thanks for the help.

Ufff difficult but i would go for different cakes and different fillings, makes a "fancy and classy" impression icon_wink.gif
The fillings I like the most are mousses, made with whipped cream and for instance raspberries (my favorite), another really "classy" one is champagne mousse (I use "cava" = spanish champagne for it, but i don' know if that is available in the US). You could use for these kind of fillings a quite soft flavor cake. Other options are for example a freckled mocha cake (with espresso powder and flecks of grated semisweet chocolate) filled with chocolate mousse, coffee mousse of baileys irish cream mousse (all made with a base of whipped cream, for the baileys you add Nutella and Baileys). Or a chocolate cake with these kind of fillings.

I was thinking that maybe you could try the WASC (White Almond Sour Cream cake) with buttercream filling, but layer fresh strawberries and blueberries on the buttercream filling. That way, you have a red, white, and blue cake! I guess it's not all that fancy, but it will definitely be yummy and patriotic! thumbs_up.gif

Or, you could go more summery and make a lemon cake with lime curd filling, or a lemon cake with fresh strawberry filling and whipped cream icing. thumbs_up.gif

Lemon cake with seedless raspberry preserves and lemon curd for the fillings (do a thin layer of each between each layer of cake) and then lemon buttercream - soooo good! Or do raspberry mousse fillng instead of the preserves and curd.
