Yes, I would say so. I have done that a few times so that I can do it and have it out of the way. Just remember that if you are using royal icing pieces on it, put them on after you have taken it out of the fridge and it has come to room temp.

Gee, whatever you do don't get those cakes mixed up!! LOL I've made them ahead and had them keep fine covered and in the frig or covered tight and set out. I don't use dairy in my icing so it's safe.

I will give a word of caution that if you are going to use any dark colors to write with (i.e. royal blue, red, black, etc.) the condensation can cause these to bleed and run (it happened to me). Mine was in the freezer, but I have seen them do that in the fridge too. If I have any cakes to do, but I want to refridgerate it, I wait until the day of or the night before to write on it. The writing I had done that ran, was on the side of the cake and it looked like bad mascara (talk about embarassing).

What a combination of cakes!! LOL!! You can decorate them, put them in a cake box or whatever, and leave them out of the fridge. They will still be very fresh!

If there is nothing persible on the cake you dont even need to put them in the fridge. You can box them and leave them on the counter. You could always put them in a trash bag until they pick them up if you are worried about freshness.
