Mmf On Diabetic Icing

okay so i'm gonna do my mom's cake (thanks to all for the cake recipe help), but i really really want to try MMF again, my questions is......


Do you think that all the sugar from the fondant will get into the icing underneath, b/c mom & sis are gonna have to pull it off

& i can't be sending them to the hospital b/c of cake icon_biggrin.gif ---

i don't have to use it i just wanted to try something different than i have before

Huh...I wouldn't think it would be a problem. I am not diabetic, but I did have gestational diabetes this last pregnancy so of course had to follow a diabetic diet. I wouldn't have worried about peeling off icing.

(Adding, though, that I was not insulin dependent).

Maybe someone with "real" diabetes experience can help.

I am a type 1 diabetic - have been my whole life - and I do not worry about the fondant affecting lower sugar icing at all. I've never even really thought about it, fondant stays together well and comes off in one piece, so I don't think it would transfer sugar to the regular icing.

ETA: do you have a good low sugar/sugar free icing recipe you could share? Mine always taste awful.

not yet, still trying to decide, but if i like how the one i use taste, i'll pm you (it won't be until Mon or Tues)

Could you possibly PM it to me as well I'm going to try some of the icing's in the recipes here and if I like the results I'll PM them to you as well. My mom's a diabetic and I really want to make her a cake.
