I want to do a cake with a pecan filling. Any help would be greatly appreciated!! icon_rolleyes.gif

I do...but I have not made it.

1/2 cup firmly packed dark brown sugar
3/4 cup dark corn syrup
1/3 cup cornstarch
4 egg yolks
1 1/2 cups half and half
1/8 tsp salt
1 cup chopped toasted pecans
3 T butter
1 tsp vanilla
1. Whisk together the first 6 ingredients in a 3 quart saucepan until smooth. Bring the mixture to a boil over medium heat, whisking constantly , boil 1 minute or so until thickened. Remove from the heat.
2. Whisk in pecans, butter and vanilla. Place a sheet of wax paper directly on the surface of the mixture to prevent a film from forming. Chill 4 hours.

chill up to 7 days, freeze up to 2 months

I have a recipe for butter pecan mousse that is very good. Here it is>>>

3/4 cup pecans
1/4 cup sugar
1 tablespoon melted butter
1/4 cup brown sugar
1 cup whipping cream
2- 8 oz. cream cheese
1/2 tsp. vanilla

Coat pecans with butter bake on a baking sheet @ 350 degrees. About 5 minutes until toasted. Chop finely. Set aside. Beat cream cheese, beat in sugars,vanilla, whipped cream, and chopped pecans.
