hey all,

I am making a cake iced in bettercream with fresh strawberries and bettercream filling. can i make a bettercream dam, or shall I make a buttercream dam? I am making a 12 inch square. torting and filling. ( I am actually attempting one of belly cakes) I don't want it to slide

What is bettercream? I've never heard of that.

bettercream is non dairy icing, like whipped icing

I don't know the consistency of bettercreme but if it is not stiff enough just add some powdered sugar and you should be fine. You need it to be stiff so it won't slide around on you and ruin your gorgeous cake.

When I ice with bettercreme, I always use it for the dam. No problems.
