I am making a mousse cake with cake ring, acetate, etc. I will freeze the layered cake. I would like to put one of those gelatin glazes on top. Does anyone know how or have a recipe. Cake will be passionfruit or mango. I would like the glaze to have that color tint. Should I just be sure my mousse is right color and glaze will be clear? Any help is appreciated.

If you don't have access to buying a mirroir glaze, and you want it to be passion or mango...you can use a jelly in either of those flavors and warm it with hot water. Thin it to get a good consistency, not too thin, you may only need to add a little bit of water. Otherwise you can mix a frozen puree (thawed) of one of those fruits and add powdered gelatin. Just get it spreadable and not too thin so your color will show.

Pat here is a recipe for Passion Fruit Mirror and it says to just glaze with Jelly. If you have a specialty store in your area, maybe a Trader Joe's, they might carry a Passion fruit jelly. Scroll way down towards the bottom.
