My Oven Telling Me Something???????????(Long)

I am way behind baking these cakes (Another long story) for my Daddy's 80th birthday on Saturday.

Thuesday I start baking. The first two was perfect. icon_biggrin.gif (carrot cake and a chocolate cake). Later the afternoon I baked another carrot cake and the fun begins. icon_cry.gif The one pan's cake came out perfect and the second one broke into pieces.

Yesterday I baked a chocolate cake. Again one pan's cake broke into pieces.
The afternoon I baked another one. Using one of my silicone pans.(Never had problems with them or my other pans before). So one side was nearly burnt and the other side..... a piece broke off.

This morning..... I didn't give up yet!!! icon_surprised.gif Sheet pan here I come. Bake perfect. What a strugle to get it out. (Yes I let it cool down for about 10 minutes before taking the cake out.) So I thought maybe it is because it is now winter here in S. Africa and my kitchen is big and cold and my pans cool down to fast. (Can that happen?) Ok an hour and a half later I tried another carrot cake. Bake it for 40 minutes as usual. Open the oven door and....... down went the cakes. icon_cry.gificon_mad.gif What is going on? I did everything as usual. This is the first time these things is happening to me!!!

Thishappened to me once maybe the mix is old i found out my was. or it is too moist t ohold together. I do think the weather has something to do with it it does here in calif. soryy i am not a big help.

Maybe I must just add I don't use cake mixes( only bake from scratch) and all my ingredients are freshly bought.

Is it an electric oven? If it is check the elements in it, sounds like one might be going.

if your using a gas oven, might want to check the temp make sure its holding the right temp, you could check that with the electric too, but usually if its electric and having problems holding temp its the element that is on its way out.

As far as getting the cake out of the pan, what i do is, line the pan with a piece of parchment or waxed paper (okay only as long as you are covering with batter) then bake the cake as usual when it comes out of the oven i run a knife around the edge if it needs loosening, then flip right onto my cooling rack never loose a bottom that way.

It is an electric oven. I will check the elements!! Usually I don't have any problems to get the cakes out of the pans. I think it is because I want everything to be perfect. (Murphy's law!! icon_cry.gif )
