OK, I have my first 11 x 15 cake to bake. I bought a huge cooling rack to invert it onto for cooling. My question is, I flip it onto the cooling rack...then how do I get such a large cake onto the actual board I'm using to decorate. icon_cry.gif

Do I place the board on top of the cake and flip again? I guess then the cake will be right side up, but the 'bottom' might be the smoother one to decorate. I hope this doesn't sound too 'duh' icon_biggrin.gif

Any tips on these large cakes would be great !! I made a note to use the flower nails on my sketch already.

I've flipped mine from the pan to the board and then back and forth again, either with another board or the pan again to get the bottom of the cake right side up. Make sure it's completely cool, a bigger cake like that is heavy and get two firm grips! thumbs_up.gif

Once cooled, I used the original pan to flip the cake off the cooling rack, then flipped it onto the board so the smooth part is facing up.

I flip mine from the pan onto my covered cake board. Let cool, then frost. I flip it directly onto my cake board. I like to frost the bottom because it is smooth, it doesn't have a trimmed off top, and it tends to be more level. HTH.

I use one of those flexible cutting boards. I flip the cake onto the rack and when it's cool enough I carefully slide the cutting board under the cake and take it to my cake board. I ice the bottom og the cake as well.

I have 2 of the large cooling racks.. I put my cooling rack on top of my pan after the cake has cooled down some... I flip the pan over to the cooling rack.. I then take my other cooling rack and put on the back (which would be the bottom of the cake) and flip it back over to the other cooling rack .. I leave it there until completely cooled down ... when I'm ready to decorate, I position my cake board which has already covered with whatever paper I'm using and flip it over onto my board and icing/decorate... this works really well for me .. hope this helps icon_smile.gif

Thank you guys ! At first I was worried I'd need another large surface, but of course, the PAN icon_lol.gif

I already sent my sweet SO out to get another large cooling rack after I posted. So I should be all set with flipping surfaces!

Thank you so much for the responses - always so great here at CC

Now of course I'm paranoid that a single layer 11 x 15 will not feed 25. grrr, I'm a worry-wart icon_sad.gif

I let my cake cook in the pan for a little while then flip it onto a cooling rack and then back onto the bottom of the cake pan to level...once i've leveled my cake I put it back on the cooling rack to completely cool...then its onto my covered cake board...good luck

Sometimes I flip the cake out of the pan and onto a rack...then stick the whole thing in the freezer for about an hour just to make myself feel a little less nervous...everything flips fine when frozen!

That will be fine for 25 people! When I made my first 11x15 a few months ago, we fed 20 (with decent-sized pieces) and still had at least 1/3 of the cake left! In fact, because of the leftovers, I was thinking I'd made it 12x18 and went out to buy a new 11x15 pan last week because I didn't think I owned one. Duh!

Good luck!

I flip one time. I wait 10 minutes, flip it out onto my covered cakeboard and let it cool on there. Never had a problem.

I never flip onto a cooling rack. I wait til it's cool enough, then just flip onto the prepared board.
