I'm making a groom's cake this weekend that has the chocolate drizzled over the icing. The recipe says to use "chocolate fudge" but I'm not sure what that means exactly. I know from the gallery that many of you have made cakes with chocolate drizzled over them and I'm hoping you can help!

Thanks!

I'd say to use chocolate ganache

I just melt semi-sweet chocoalte and put it in a squirt bottle to drizzle. I suppose you could use anything you wanted though. You could use ganache if you wanted something that did not dry hard like chocolate.

You can always buy the fudge in a jar, made for ice cream topping. Be sure to warm it up a bit so that it can be poured.

All of the suggestions are what I would have said! If you could make a ganache, though, you let it set to room temp, and it is still pourable, and spreadable, and wouldn't melt any of the icing as could happen with heating up choc. chips or fudge (but that ice cream fudge is soooooooo good!).

Thanks for all the ideas. I am worried, too, about pouring something warm over buttercream icing. icon_smile.gif

I think I would like to try the ganache but I've never made one before. Any recipe suggestions?

I have used the ganache recipe on www.baking911.com. for a grooms cake. It was wonderful!
