I need to make royal icing for my Wilton II class, and our instructor told us it's best to make it right before class. I don't know about you, but I work all day and it's not possible to do that. She told us that if we made it in advance, we'd have to bring a hand mixer to class and re-whip it before we used it. Is that true? Could I just make it tonight to use in tomorrow's class without having to bring a mixer and tons of bowls?
yes you can make it tonight. You do have to mix it before you use it tomorrow but a spoon is just as good as a mixer. (in fact I mix all my royal by hand)
You can make it ahead of time. Just remix a little. Like was said before. You should not need a mixer. But if you wanted you could mix it with one right before you left for class.
so what happens to the icing overnight? Does it get harder, or separate? I don't understand why we need to re-beat it... ![]()
It does seperate a little. Basically it doesn't look right when you open the container but as has been said just give it a quick mix with your spoon. Doesn't even take a minute and it will be fine
I have made royal icing and kept it in one of those Gladware containers for up to two weeks. When you open it up the next day, or whenever, and mix it it will appear kind of foamy at first. Not bubbly, but real light and airy. I mix it with a spoon just to smooth it out. BTW, the Wilton course book says that you can store it up to two weeks in an airtight container.
