I've never looked into all this stuff and the person that originally said diabetic cake is now being told by her doc to do low calorie stuff... so are there lots of calories in cakes? I don't havea mix here to look sorry!
THANK YOU - for any and ALL help!

humm... are cakes low in calories.... NO.. lol

just to think, 2 table spoons of icing sugar, is about 100 calories, depending on the brand.. then theres cake mix- about 140 calories per 1/12 th i beleive.. then theres shortening, calories are in it... soooooo every little thing counts!

the average person should have a calorie intake of around 1600-2100 calories a day, depending on the person.

there are always things u could do to lessen the calories in a cake, like using splenda instead of sugar in a scratch cake mix, i dont no much of a change u could do for the icing.

about mmf- marshmellow are obviously competley sugar, so there HUGE in calories also..

cakes arent the best idea for diebetics ( my fauther is one-type 1) but in moderation its not HORRIBLE, but thats realy for her doctor and her to decide.

sooo good luck and hopefully she will get cake !

THanks - I just reread my post (I was about to fall asleep at the puter last night) that was a silly question... LOL....
Basically there isn't anything I can do - I don't make scratch cakes I make doctored mixes. SO I'll just tell her no, and maybe momma can just take a tiny piece and peel off the mmf. I dunno but thanks for answering my silly question.

I ran into a recipe from I believe, Weight Wathers. It calls for a regular cake mix, but to add 1 can of diet soda ONLY instead of water, eggs and oil.

I've made this quite a few times because I am allergic to eggs. It gets crumbly, but tastes pretty good. It does especially well in cupcakes-you might consider sending a couple of these along with the real cake.

There are various combinations for recipes around the internet-like lemon cake with lemon sugar free pudding as topping.. etc. Just look up diet soda cake. I belive they have nutritional information on them too.

If you are just doing cupckaes you can use sugar free cool whip to ice-it actually tastes good!

Have you tried recipes from splenda? Use light whipped cream as icing?

Stricly speaking, as a diabetic, I don't want no stinking "low cal" or "sugar Free" cake! I want it full of sugar and goop... no shortcuts! That't the bad girl in me. The good girl in me will look at the sugar and goop laden cake and say "Just a small slice, please".

People think that being diabetic means your love of all things bad for you has to stop, but in small portions once in a while as a treat is okay. Like the saying goes.... everything in moderation.

Anyway, it's not the calorie thing we have to be careful of, it's the carbohydrate thing. I don't care what you mix with the cake mix, if there is flour there is carbohydrates. Sugar is just a simpler form of carbo's.

Another Weight Watcher's tip is to take a regular cake mix and add 1 package (600g) of dessert tofu and 1/4 cup of water instead of the oil and eggs.

I know its sounds gross but it makes the cake SOOOO moist. All my coworkers love it. No had a clue until I told them.

Thanks - I don't know if this girl knows what she wants -LOL.... I think its a new diagnosis or something b/c at first she was told to eat low sugar now they are being told low cal. I have no idea!

If I did the WW cake do you think it would hold up ok? I mean she wants a mmf covered cake.
I really don't want to just bake the cake b/c my dh won't eat it he will not eat artifical sugars. frankly I don't want nor need a whole cake on my own. kwim..

I have made the WW cake with the cola several times and, while it is tasty - especially for the dieters, I don't think it would hold up under fondant. Not sure if it could be stabilized by adding more flour to the mix? Maybe an expert on cake mixes could answer that. Just wanted to put in my 2 cents regarding the texture of the WW cola cake.
