Kind Of Cake Mix?

Okay, so not to start a holy war, but what kind of cake mixes do you recommend? I am partial to Betty Crocker (French Van, Butter recipe yellow and Chocolate fudge). This is a big deal in our area but I get the best results for these. I do need help however, getting smooth results with no huge air bubbles (or small ones for that matter). Anyone have any suggestions???

I also prefer Betty Crocker. If I can't have that, my second is Pillsbury. BC tends to yeild the most cups of batter and my cakes always turn out really moist. I have heard that air bubbles are caused by overmixing the batter, just make sure to time those 2 minutes of mixing perfectly! Also use a rose nail, heating core or baking strips to ensure even baking.

I use BC too, and chocolate fudge is one of my favs. My husband hates the way Pilsbury tastes and I have to doctor it or it breaks before I get it out of the pan, my mother has the same problem.
I don't use DH because most of the grocery stores don't carry it. One does and the mixes are $2.43 icon_eek.gif a piece.
I don't have problems with large air bubbles.

If your having a problem with air bubbles after you pour your batter into your pans pick them up and drop them a few times on a solid countertop this will knock any if those little devils right out.

I agree with Sugarcreations .... if you 'drop' your pans on the counter, table, etc. the bubbles with rise to the top and pop or you can poke them with a toothpick.

I also switched from DH to BC. I really do like it better. I seems to rise higher and it is super moist. I couldn't find good flavors of DH in my area anymore, so I switched and I'm glad I did. I tend to get air bubbles also, but I don't really mind. I have heard also that dropping it reduces that. Good luck.

I love pillsbury. I get great results with my pillsbury cake mixes.

I'm also a Pillsbury girl. Betty Crocker will do as a good substitute. I don't care for DH at all.

I like Pillsbury, but stores around here seem to only carry a limited number of flavors (funfetti, white, yellow, and devil's food). Betty Crocker has a bigger selection of flavors, so I've been using that recently. Duncan Hines cakes are really light and fluffy, and I find that they tend to be more fragile and break when I turn them out of my cake pan, or I end up smooshing them too much when I ice.

I actually use DH, I find that I can get them at Super Walmart for only $.87, and that makes the profit margin go up! I have never had a problem with bubbles, or turning them out. I am happy with the moistness of the cake, as I freeze my cakes when they are still warm!! They have worked for me.... icon_smile.gif

I haven't met a mix I didn't like but my favorite is Pillsbury for chocolate and white. I give my pans a good whack on the counter also before putting in the oven to make the bubbles rise to the top.- Walmarts in my area sell them for .87 which is great too.

I use BC, DH & Pills, and get similar to identical results from all - I just buy whichever is on sale. Safeway often has 10 for $10, or sometimes, which is when I REALLY buy it up - they have it for $0.70 each! I just saw that Walmart comment though, I'll have to try them too! Thanks!

I prefer Duncan Hines, but use BC as a sub when I can't find the flavor I want in DH (sometimes even wal-mart's stock is limited). I do like the chocolate fudge and triple choc fudge by BC, can only find devils' food in DH (don't like devils food).

As for air bubbles, hold your pan up and gently shake from side to side a few times (causes air bubbles to rise to the top), then I "drop" them on the counter about 30 times. THis works for me.

I only use BC. i love it, found this out when i was much younger and not so interested in decorating yet. I don't care for DH or Pill's. I usually buy my mixes from Target for a dollar. Or from BJ's wholesale 6/4.99 (i think).

I was intrigued by this thread, so when I went to the store yesterday, I broke away from my DH allegiance and went straight to the Betty! (Gasp!) shhh.gif I made the triple chocolate flavor..... can we say delicious? It was so good and I didn't seem to have any troubles with getting it out of the pan. DH does seem to be a bit more fluffy, but overall.... I think I might just visit Betty a little more often. Thanks for the inspiration to break away from the familiar. icon_biggrin.gif
