Royal Icing Question Please Help!!!

How do I know if my royal icing is too thin or too thick? I know it is too thin because it won't hold the flower shape. Is there a trick?

You should be able to form peaks that stand up for firm icing and the sheen should be gone from your icing when you beat it. If you are doing any kind of decorations with it the icing should be close to firm. If it is too thin you won't be able to do anything with it at all.

One way to check: place a small metal spatula in the bowl of RI; if it stays standing, it's stiff. If it stands, then starts to fall, it's medium. If it won't stand (just falls over), it's thin. Hope this helpls.
