I have my first wedding cake due on 7/7/07 and need to get a timeline/schedule figured out. Here are my thoughts - let me know if you think this is a good plan.
Week of June 25 - 29 bake, wrap and freeze all cakes (2 each, 8" 12" 16")
Week of July 1 - 6
Crumb coat, re-wrap and freeze each cake Mon, Tues
Put together layers, frost and decorate and add dowels Wed, Thursday
Dry run of stacking Thursday night
Box cakes and prep for delivery Friday night
Deliver on Saturday7/7
