I found a recipe for chocolate ganache on this site . It called for 8 oz cream. Is this heavy cream? Whipping cream? Also if I make it up how long can I refrigerate? Jonna

Yes, it is heavy whipping cream. It will last at least a week refrigerated but it becomes very thick. A little time in the refrigerator and you can use it as frosting but if it stays too long, you can make truffles...MMMMMM!

Heavy cream and whipping cream can be used interchangably for making ganache. It will stiffen up when refrigerated, but you can gently microwave it to bring it back to a softer consistency.
