Okay, I figured out my lesson plans (roughly)... Some of the classes I would split up into 2 nights, others would be all one night... is there anything that I'm missing that I should add? Just looking for other cake decorators opinions on them... thanks!!!
Course #1: Lesson 1: baking, torting, filling, icing, smoothing - 2 hrs.
basics-star, line, zigzag, dots, outlining - 1 hr.
Total: 3 hrs. in 1 night
Course #2: Lesson 1: borders-shell, bead, ball, ruffle, rosettes, reverse shell, rope - 1 hr.
basketweave & colorflow - 1 hr.
Total: 2 hrs. in 1 night
Course #3: Lesson 1: Writing & Figures-heads, hearts, balloons, clowns, bows
food-corn, grapes, carrots, strawberries, apples, cherries
animals-teddy bears, bunnies, chickens, chicks
printing, writing
Total: 2 hrs. in 1 night
Course #4: Lesson 1: Flowers-star flower, swirl flower, sweet pea, violets, apple blossoms, wild rose, rose buds, chrysanthemums, sunflower, daisies
Lesson 2: roses, bachelor button, pansies, daffodils, aster, carnation, leaves, vines
Total: 4 hrs. in 2 nights
Course #5: Lesson 1: Advanced Flowers-poinsettia, morning glory, Easter lily, petunia, cornelli lace, sotas, brush embroidery & ruffle garland
Total: 2 hrs. in 1 night
Course #6: Lesson 1: making FBCT (2 hrs.)
Lesson 2: putting it on the cake, border (1 hr.)
Total: 3 hrs. in 2 nights
Course #7: Fondant Intro-tinting & marbelizing, covering cake & board, borders-balls, rope, punched strip; 3D cutout accents
Total: 2 hrs. in 1 night
Course #8: Lesson 1: Fondant Flowers-carnation, daisy, calla lily, draping, handkerchief, garland
Lesson 2: bows, box, figure molding
Total: 4 hrs. in 2 nights
Course #9: 3D Character Cakes - 2 hrs. in 1 night
Course #10: Cupcakes - flower pots, ice cream cones, cupCakes - 2 hrs. in 1 night
I think your first lesson (or an hour of the first lesson) should be on supplies. What they'll need for the courses and what is exceptionally helpful. You'll need to show them how to make the different icings aslo. You could do the torting and icing in that class also. I think showing at least 2 ways to ice smooth would be best (viva, wilton...)
