how long do you let them cool in the pan? Maybe they're too hot.

usually until the pan feels cool.

When you take cake from the pan, what I do is flip them again so they cool right side up...(dome up)...if a cake sits on its little hump, it will crack more easily! there is way less stress on the cake if it cools right side up. I cover the cake with a paper towel, then tip it out onto a cake board, then cover them again with another paper towel and flip them on to the cooling rack...that way they end up right side up...

I always wait 10 minutes, no more, no less and I have never had a problem..

Also when I take my cake out I immediately press down and level it while in the pan. I then wait 15 minutes and flip it out.

right out of the oven, press down to make it level and then let cool for 5 min in the pan then flip. Good luck.

Too warm when you take it out of the pan and not on a level surface to cool are probably the two most common reasons. I've done it a million times always drives me nuts.

Me too! Wait 10 minutes, turn onto cooling rack. then flip is back over onto another cooling rack so hum pis on top. Allow to cool then level the top.

Does humidity affect it at all?? I've been having trouble all day!! I've done the same layer twice today.

Hey my family and next door neighbors think it's great(they get the fruits of my mistakes) but I don't!! I want to get these layers baked so I can start assembling and freezing!!

Oh, it's a marble cake, if that makes a difference.
