How Well Do Fondant Pearls Freeze?

I have an order for an anniversary cake--12" and 8" 2-layer cakes for next weekend. I will be going to ICES, so customer wants them for Wednesday and says she will freeze the cake, take out Friday morning and serve Saturday evening.

I know cakes covered in fondant do not fair well (or at least I'm not brave enough to try) if frozen but this cake will have buttercream frosting, quilted pattern and fondant pearls.

Will the pearls hold up? Or will they fall off the cake once it starts to thaw? I push them about halfway into frosting. TIA--Pam

Since this customer is so accommodating and loves your cakes so much she is willing to take it in advance, maybe she or someone she knows could apply the pearls the day of the wedding.

Are they only on the quilted part? My husband put the pearls on the last cake I did because I was crunched for time, and he did great!

I made MMF 'bubbles' on my rubber ducky cake in my photos. I froze those, then transported 3 hours. They held up just fine.

if she keeps in in a cool A/C room, and out of direct sunlight, the cake should be fine if she just leaves it alone until the party.

just keep time frame in mind when decidign on the filling, etc.

Thanks--
the bottom cake will be White Almond with butter pecan filling and top cake will be chocolate with milk chocolate filling.
