OK...so now that it's getting hot in my neck of the woods, I want to start experimenting with lighter cakes & fillings. What are some of the lighter cakes and fillings that everyone is using? I have been doing darn good chocolate all winter long and am ready for some lighter versions of cake.
Yep the lemon is one of my most popular too as well as white cake with blueberry filling and whipped cream frosting. Banana cake is great I love pinapple pound cake as well goes good with a dollop of ice cream. Ice cream cakes are another summer time treat. Of the there's the ever popular strawberry short cake. I like to use a white cake mix with peaches as well I just dry the peaches realy well and toss them with some of the dry cake mix, then stir them in after all the mixing is done. You can dust with powered sugar or frost it. ( I use canned peaches for this one)
lemon cake, whipped cream and strawberries just screams summer to me!
Here's a thread on top shelf cakes:

They all sounded wonderful, but the Margarita cake might be what you're looking for. ![]()
Or perhaps a Tiramisu:
