Adding Fresh Fruit To Dh Cake Mix? Help!

I have an order for a cake but need to go over some things before I start!

I have fresh raspberries for a cake that needs to be done by tomorrow. Can I make the DH white cake mix and just add 1/2 to 1 cup of fruit? Or...do I need to add extra ingredients such as eggs, water or oil to make up for the fruit?

I have never done this before and I am a little hesitant to start without discussing this with the experts here thumbs_up.gif because I have a limited supply of fresh raspberries!

I would NOT add extra water or oil. I WOULD add an extra egg because the raspberries are juicy and the egg will help stabalize it. Also, I would lightly ''fluff'' the berries in flour and shake off extra, then carefully add them to batter at last moment.

Is it supposed to be a "raspberry cake"? Or just a white cake w/ raspberries? If it helps, I used the Cake Dr cake recipe for Strawberry Cake (pm me if you need the recipe), you could follow that, just sub raspberries for strawberries. I also did a search and found this one (similar to the strawberry recipe): http://www.anniesrecipes.com/jello/raspberry_cake_recipe.htm
I think even just a few raspberries in a white cake sound good too... (I love raspberries!), toss them in flower first, to prevent them from sinking to the bottom.

What about making a white cake with a raspberry mousse filling. There is a very good one here in the recipe section that I have used and everyone loved it. It's a little chancy to add the fruit to the mix if you have done this before and don't have time to practice.

Thanks so much for the replies! Now I have to decide which way to go while I am adding MORE recipes to my box!!!

It is a white cake with raspberries and then the frosting will have fresh raspberries in it as well. Real simple cake!?!

Hi cakesbyallison, please see the tab at the top of your screen that says recipes and look on the right hand side of the bar to find fillings. Scroll through until you find the raspberry mousse. YOU WILL LOVE IT!
