Need Advice Re: Red Velvet Cake

im doing a baby shower cake next week, an 8 and 10 stacked. problem is my friend requested a red velvet cake. i made one to try it out and im concerned about the cream cheese icing. it was so soft that it was very hard to smooth without the cake showing through. im also worried about the heat, its 100 degrees and humid here every day. i need to use MMF decorations on it..will they stick? is there a cream cheese icing that is a bit more decorator friendly? or, should i just tell her its not going to work?

use the ICING TIP to get at least the crumb coat on. I made one once where I did one go of icing tip...waited, then a second go and smoothed that.

MMF will stick just like to any icing (and maybe more so if cream cheese goes soft!)

split icing between at least two or three bags and rotate between them, keeping others in fridge and even in freezer short time if necessary to keep it firmer to work with. (this icing is a real pain for those of us w/ "hot" hands!)

crank up car's a/c to prechill so it's nice and cold before delivering.

Hmmmm. I hate cream cheese icing. I am horrible at getting it to smooth forget the 100 degree factor. This is my BUMP for you! Good luck!

I've used my regular buttercream on the red velvet before. I don't often do cream cheese icings since I don't ever have room in the fridge for them.

So that may be an option for you.

We always used twinkie frosting on red velvet. Can you change from cream cheese?

Zmama, What is twinkie frosting. I know what a twinkie is but is there a recipe for the frosting? Thanx
