Thanks!

It really depends on what flavor the cake is.

For lemon cake I like lemon curd either alone or with raspberry preserves OR just raspberry mousse.

For chocolate cake, mint-chocolate chip buttercream is good, so s chocolate mousse, raspberry preserves and chocolate ganache, chocolate ganache with grand-marnier, mocha buttercream....

For vanilla cake, strawberry filling is good, so is vanilla custard or vanilla bavarian cream, and then so is fudge.

Oh yes that's true. Sorry. icon_razz.gif
Do you have the recipe for the mint-chocolate chip buttercream or the chocolate mousse? Do you know where I can find it?
Thanks!

Mint Choc Chip BC is easy! Just add or sub peppermint extract for the vanilla extract in your favorite BC recipe (peppermint extract is really strong so you only need to use 1/2 as much as vanilla). Then fold in mini chocolate chips!

My fav chocolate mousse recipe is Alton Brown's from his Food Network Show Good Eats. Here is a link: http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_14225,00.html?rsrc=search
