Hello everyone. I am new to cake decorating and have a question. I was reading the upside down icing technique for smooth cakes. And was wondering what is crumb ice? My instructor has never metioned this when icing a cake. Thanks.

they might be referring to a crumb coat. which is a thin layer of frosting put on and let set before putting on a thicker layer. the idea is to lock in the crumbs so they wont get in the outer icing. icon_biggrin.gif

Thank You so much for the reply. When you do that and there are some crumbs do you try to remove them? Or let crust and ice over? I forgot to tell you I am using buttercream. Thanks again

Let crust and ice over. The crumbs should not transfer from your crumb coat to your final coat. The crumb coat should be very thin. When I do mine, you can see the cake underneath.
