HI! I'm new to the forum and to cake decorating. I wondered if anyone could help me with how much in advance I can bake and decorating 2 character cakes. I'm making my nieces b-day cakes for next Saturday (Barbie and Dora). How early can I bake the cake and how early can I frost them and still have them be fresh tasting. Also do they have to be refrigerated? I usually keep all my cakes in the fridge until serving - is that wrong?? I just don't think my sister will have room for 2 cakes plus food in her fridge for this party. Any help/advise would be great!! THANKS!

Sitting out all depends on your ingredients. A cake mix and buttercream icing can sit out for 3 days and be fine. You can always make the cake today and freeze it - just make sure you wrap it up really good.

I will sometime bake the cake up to 2 weeks in advance and place in the freezer wrapped in saran wrap and foil. When you take it out of the freezer, take off the foil but leave the plastic wrap on until the cake reaches room temp. If I'm going to decorate in the morning, I take it out the night before. As far as frosting it, if you are just using a basic buttercreme it should be okay for 2-3 days out on a counter in cake boxes and still be very good! Hope this helps.
