Do I need to add shortening to make it pliable? Also is it okay to spread it thin on a cookie sheet? The book I have says heat a 9x13 pyrex then spread the chocolate on when you think both are the same temperature.
I'm not doing it tonight but would like to do them for a cake tomorrow but won't have much time. Thanks!
Hope this is helpful. Chocolate shaving ot rolls to me means melted chocolate (nothing added) spread out on a cool surface and when just about set, not fully, a scraper or pallet knife is drawn over the surface to make rolls. I have a picture of a wedding cake I did with white chocolate rolls in my profile. I use a paint stripper to make these as they came out just the right size.
You can use the cookie sheet, but I would careful not to get the pan too hot. If you are more comfortable adding shortening, go ahead. It will keep the chocolate softer and give you more time to work with it before it sets tight. Once the curls are made, let them cool completely before applying to the cake to keep them from crumbling.
