My husband is a FIEND for these things, and I wanted to make him an actual cake that tastes similar for Father's Day. The cake part and the marshmallow I think I have got under control, but I am not sure what I would do about chocolate? Buttercream seems too heavy, and I am not sure how to accomplish a good texture using only chocolate. Any ideas? Thanks in advance!

I definitely agree that ganache would be perfect. Moon Pies are SO yummy, and your hubby is going to be so excited about your creation!!
