Help!! Making Icing Now!!

I am making cream cheese icing and it's 1 1/2 lbs cream cheese, 1 1/2 cups shortening, 1 Tsp vanilla, 1 Tbs butter flavor, 6 Tbs milk, 3 lbs powdered sugar......I added extra powdered sugar upon realizing it was not stiff enough.....Still not stiff enough and really sweet...What should I do?? I also added 3 Tbs meringue powder.....Should I add more shortening or cream cheese????

I would add a little salt to cut some of the sweetness, but not sure on the cream cheese or shortening. If I had to pick one I would go with shortening.

I would definitely NOT add more cream cheese. I don't know about shortening, though. I made just a cream cheese frosting, and i know what you mean. You can keep adding more sugar, but it never seems to help. I just lived with the thinness of the icing, but it didn't really matter. More shortening and icing sugar might help. Sorry to not be of much help !

i would add alittle lemon to cut the sweetness. But it sounds like too much cream cheese and shortening. What if you pop it in the fridge and see how much it firms up

I don't think that adding any more cream cheese or shortening will make your icing any stiffer. I would keep going with the powdered sugar and try adding a bit of salt to cut the sweetness. You could also try adding some lemon juice to combat the sweetness, but it may just add to your stiffness problem.

Thanks....I was thinking maybe a little salt would cut the sweetness...I wonder if adding more meringue powder would help???

I am going to store it in the fridge when I finish. It is for a groom's cake...The heat is outrageous here and so it is going to be a challenge making it to the church, plus I'm doing dipped strawberries!!! What was I thinking!!!!!

Cream cheese icing is hard to get right. I'm going to try the crusting cream cheese icing on this site next time I need some.
