When you all make your sheet cakes, do you double the layers like a round cake? Or do you just bake an 8x11? thanks.
Well, to me, a sheet cake is only a single layer, so it's 2" deep and gets cut into 2" x 2" squares. That essentially gives the same amount of cake as a 1" x 2" piece of cake that is 2 layers deep.
That being said, however, it depends on what your customer wants. Do they want plenty of servings but only 1 sizeable cake? Then maybe a 2-layer cake is called for instead of two 1-layer cakes.
When I suggest a "sheet cake", I am suggesting the 1-layer kind. Otherwise, I would suggest a rectangular cake, which I would make as a 2-layer.

Typically I just do one layer unless they request otherwise.
It depends on how much they want to pay. I have pricing for single layer no filling, Double layer buttercream filling, Double layer one layer filling, double layer three layer filling.
Each type is a different price. I will do it however they want me too.
I think most people think single layer when you say sheet cake. I have seen many two layer sheet cakes - mostly used as kitchen cakes at weddings.
