Chocolate For Dipped Strawberries??

I am getting ready to dip strawberries for the first time. Any suggestions on what chocolate to use? I want the milk or semi-sweet taste and am going to drizzle with white chocolate. Should I use melted chips or candy melts? Which gives the best results?

I think they both yield the same result chocolate chips are cheaper though

I use Sarah Bernhardt chocolate glaze for dipping berries, and I use Guittards semi sweet chocolate chips. The glaze sets up well on the berries, leaves a nice shine and they are softer to bite into than pure chocolate.

If I'm going to use them on a cake that's being delivered on Saturday (eaten on Sunday) how far in advance can I dip them??

I used the glaze and it is awesome, it is very versatile and a beautiful shine. Not to mention absolutely DEEEElicious!!

I would dip them as close to delivery time as possible, especially since you are delivering a day early. I did some one night and by the next morning they were weeping some.

I dipped mine just about an hour before delivery!!

I ditto what Melissa and Miss Robin have said. I've done several wedding cakes with dipped berries, and they definitely weep if you do them too early. I don't even put them on the the cake until I deliver it.

That is the nice thing about the glaze, the berries don't weep after dipping. I dipped mine the night before and put them directly on the iced cake, then refrigerated overnight. It worked perfectly.
