Diamond Pattern Question

I bought one of those metal diamond pattern press things and tried it out today. I used it on crusted buttercream icing. WHen I pushed it on and then pulled it off the edges were rough. If I pushed lighter it didn't show up well. How do you guys get that great, smooth quilted pattern? Thanks for your help!

i may be wrong..

but I thought metal ones were for fondant and that there are plastic ones for butter cream.

can someone shed more light on this topic please?

Doug, we have the same b-day!!! April 18th of 1980, woohoo, we should have a party, we'll have one now to celebrate the coincidence and one on the 18th for us getting older!

I do not think that it matters whether the cutter/impression maker is metal or plastic. JEM makes gumpaste/fondant cutters out of plastic, as does Orchard Products (both UK).

I think maybe you pressed it in too far, and the softer buttercream underneath stuck to it. Try just pressing it in to the end of the crusted buttercream.

You can also try dipping it in hot water and drying it (ala hot spatula method) to prevent the soft icing underneath from sticking.

sounds good....but I stopped getting older at "39"--not telling how long ago that was!!!


and now we return to the question at hand...

how to get those diamond lines on the cake?

metal or plastic?

I use plastic impression mat but I agree with tmriga. Maybe it pushed into the softer BC underneath the crust.

You can get those impression mats that are like a whole sheet of diamond impressions and you jsut have to line em up. I have a site saved where you can get them for 6 bucks or so, i'll look for it if your interested in that.

I saw them at cakesbysam.com. She says to use cornstarch in a knee hi to dust the mat and then make your impression. It helps prevent sticking. Hers are plastic and it says for both fondant and a crusting buttercream.

I got mine from www.earlenescakes.com. It was fairly easy to use. I just dusted mine with powdered sugar. I think Earlene also has directions on her site on how to use these. Here is the cake I did with one.

I really want to get 1 of those mats, do they have them in Michaels? I havent seen them there but maybe i just missed it. Sorry i cant help with the question.

I have been asking for impression mats at Michael's and haven't found any yet...I even looked in the scrapbooking area where they use impression mats for paper but couldn't find anything there either. Best of luck to you!

michaels, ac moore, hobby lobby et. al --- pretty much if it isn't a Wilton product they don't have it

need to hit the specialty shops or online for the mats

You can get some silver plateau stands on Ebay--I purchased all of mine from buy4lessusa (they have an ebay store). Dependable, fast shipper and answers email.

Ok i had no idea the impressons were so expensive. I saw a metal 1 for $27 and there were only 3 diamond shapes not even a whole mat. I just went onto country kitchen and they have some mats for $44. Thats a little to expensive for me. I'm going to order their diamond impression mat (plastic) for $5.

Has anyone tried the impression rolling pins? Cakesbysam sells a beautiful heart & swan pattern that I realllllly want. Only problem is how would you get the pattern on the side only of your cake? If you wanted it all over I would guess you just roll the pattern on there before applying the fondant to your cake, but if you just wanted to do just the sides of your cake wouldn't you have to do that after it's already applied, and then you wouldn't be able to apply enough pressure to make the impression? Any thoughts? Anyone use one of these?

I only use the plastic one impression mat.
