Hi ratio shortening has special emulsifiers that allows it to absorb more liquids without breaking down - so you use less amount than regular vegetable shortening. It is slightly more expensive than regular shortening.
You can get some from Country Kitchens: http://www.countrykitchensa.com/catalog/product.aspx?T=1&productId=619115
There are also other brands like Alpine and Sweetex.
Thank you for that link miriel. I just went and ordered a 3 lb tub. The s&h wasn't too bad, but I wonder how long it will take to get here. Yh9080 is helping me out for the wedding on the 8th. Then I will work with this new shortening to get my recipe right again. Thank you all for help and advice, this is why I love this site!
Since I am "stuck" on this shortening thing..in my area the only 2 shortenings I can find that have trans fats are: Creamtex at HyVee and Great Value at Walmart...has anyone used these? Thanks for putting up with me!
