You replace some of the water and/or oil with the coffee-mate, then you add an extra egg. How much water to replace is up to you and depends on the flavor you use. It seems the caramel one makes things awful sweet if you add alot, but the with the white chocolate raspberry you can add more. However, be careful, you may not want to replace all the water, some people replace 1/3 or 2/3. This makes the cake taste wonderful, but it also makes it dry out quickly and it has a tendency to fall in the middle when baking. Hope this helps.

If you use the powdered creamer, 2 Tbsp. per box of cake mix, or scratch recipe seems to be the standard.

O.K. So I am still unsure of the quantities of Coffee Mate to use. I always use the cake extender when using a boxed cake mix.Is some of the liquid of the cake extender recipe replaced with Coffee Mate and do you still have to add an additional egg beside the one added in the cake extender mix?. Recipe using both in a cake mix please.

you can use both liquid and powder form. I use box mixes too.
For powder, about 2 tbsp seems to be the right amount. Just taste your batter and adjust to your liking.
With liquid creamer, its a little trickier. Replace part of the water with creamer, but not all. The creamer is heavier and if you use too much your cake will likely sink in the middle. You have to play around with this one more. I'm still experimenting so this is just my experience. HTH
