I was asked to make a birthday cake for a child for July22. I am now going to be going out of town on the 18th. Can I make the cake, decorate it and instruct them to keep it in the fridge until Friday and remove it to defrost for the party on Sat. They want a train cake for a 3 yr old. It will all be decorated with buttercream. Has anyone done this?

I have frozen it a few times using Buttercreme and had great results with that. Just make sure when it thaws it is room temp or the color my run a bit. I had one that a made a couple weeks ago and froze it for 2 days thawed out the day of but was extremely hot (no a.c where the party was) but i would think that normal conditions it would do better or tell them to refrigerate until it thaws.

I've been in this same situation ~ where I made the cake the day before I left and the customer picked it up from my freezer 4 days later. I had her set it out to thaw at room temp without any covering and it all turned out well. No problems at all. Hope it works for you too!

I had to do this a week ago because the party was rained out. Had to freeze it until this week and they said it was great!
