Mmf...how To?

Making MMF in my new KA and just wondering if I should use the dough hook or the paddle and at what speed. What about flavoring? At what point do I add the flavoring and can I use anything I would like? Lemon? Almond? Also, should I sift the powdered sugar? Please advise. Thanks so much!

If you use your KA, use the dough hook on the lowest speed. Add the flavoring when you melt the marshmallows, you can also add coloring at this time too if you are only making one color. I have found it helpful to sift the powdered sugar so that your have fewer lumps that will need to be kneaded out later.

I would definitely go with the dough hooks......the paddles will be useless once it gets thicker.....I would add in the flavoring after the MM are melted, I've heard it tastes wonderful with the almond and the lemon but haven't tried either of the two personally. I have however had great luck using the dough hooks to make it......only on a sunbeam not a KA.....wish I had one

I just made my first batch of MMF on Monday night and I used the paddle attachment to mix the marshmallows and half the sifted powedered sugar. I then switched to the hook attachment when I added the remaining powdered sugar as it gets really stiff like bread dough. Mine turned out really good.

KHalstead thank you for pointing out you had success with the sunbeam because i have 1 and didnt think it would hold up to mmf so i did mine my hand. Next time i'll definately use my mixer.

Samsgranny i use bakers&chefs PS so i dont need to sift mine. i'm guessing if you sift for buttercream then you should sift for mmf. If you do have a PS thats not lumpy at all though i dont think you need to sift. Run your hands thru it and see how it feels.

Thanks for this post--I just bought some mm's to try a batch of this as soon as I get time.

I'm thinking I'll like it better than my usual Petinice for taste (maybe), and I KNOW I'll like the price!! Plus, for dummy cakes--it might be a perfect solution to the fondant-is-so-expensive issue.

Yup, start with the paddle, then as it becomes thick, switch to the dough hook... this is how I've always done mine and it's worked well for me... good luck and let us know how it turns out for you!!
