I really really like the White Velvet butter cake and the Chocolate fudge cake for a chocolate...These are the white and chocolate I use for weddings.

I've done the White chocolate whisper cake too and all the other chocolates, but the fudge one is my fave so far.

Her large-scale recipe for wedding butter cakes in the back is REALLY helpful, too. And take the time to learn her Rose Factor thing--it's wierd, but baking powder is a strange thing. I finally sat down and read it and understood it, but so far I haven't had to use it.

Enjoy--it's a wonderful book. I have her pies and pastries book, too.

Thanks! I think that I am going to try the white velvet this weekend. Do you use a simple syrup with her cakes?

homecook, do you use her buttercream? I have been wanting to make the neoclassic but haven't yet. I love reviews before I make something. I will have to try the white velvet cake next, I see... icon_biggrin.gif

I've made a few of her cakes, mostly white, yellow and chocolate. And I've made the neoclassic buttercream, which I love. Have fun. I use those charts in the back constantly. It's a great book.

The Cake Bible is a wonderful book! The neoclassic buttercream is fantastic - though the first time I made it I wasn't so sure about it. It completely looked curdled and I thought that I had lost the whole batch, but then it magically became fluffy and light.

It's the icing I use on a very regular basis for all my cakes.

I tried her pound cake recipe at the beginning of the book and forgot to add the BUTTER!!!! I was soooo mad!!! icon_mad.gif

I want to try it again done.

I am a little overwhelmed with all the recipes but told my hubby today (he bought it as a birthday gift) that I was going to start trying recipes.

Well, I have to say that just tried the recipe on page 60-61, the Chocolate Fudge Cake and it is DIVINE, MOIST, MELTS IN YOUR MOUTH kind of cake!!!!!

It is sooooooo good!!!!!

No, this ones is The Cake Bible written by Rose Levy Beranbaum. It is only scratch cake recipes.

Its really thick and it gots everything and anything you need to know about baking.

That book was probably "THE CAKE MIX BIBLE" that you saw. "The Cake Bible" is much more pricey, a hardcover book. I don't think Target would carry it. Try Barnes & Noble or Books A Million if you have one nearby.

I've made the Perfect All American Chocolate Butter cake and it really melts in your mouth. I've also made the neoclassic butter cream and I love it too but my favorite is the Mousseline buttercream (I don't know why it's called Mousseline and not just IMBC because it seems the same. My favorite mousseline is "white chocolate". It tastes great on a lot different cake flavors. Anyway, all the icings are so smooth it makes you want to never use powdered sugar icings again. Just this weekend I tried the dark chocolate ganach and oh my goodness. It's wonderful. I love all her helpful hints and i really love the the different measurements. I went out and bought a scale that measures grams and ounces. Using weighted measure is so cool because most of the time you can add things right to the same bowl and not have to use to bowls or cups and then scrape out the ingredients. It's a wonderful book.

I made the white choc whisper cake this week, and I'll tell you, I got the credit for it, not the cake bible, My husband said about 3 different times, "your cake is sooo good".

Granted, I haven't made cake in about 3 wks. I guess absence makes the heart grow fonder. [/code]

You know, one thing I sometimes do is to go to the Public Library and if they have a book I want, I go and check it out, and if it is worth buying, I go back to a regular store and buy it.

This has help me decided what should be my first book. I plan to get this book this weekend. Even the reviews on barnes and noble and amazon was great.

I purchased my cake bible about 2 years ago. The white velvet is the one that is most requested for wedding cakes. She offers some really wonderful idease. I love the large volume cake ideas they really help. I want to try every recipe in that book. I think I paid $35 for mine. Great Buy. MC
