I've just started cake decorating. I've been observing (watching FoodTV, surfing the internet) for awhile though. I just have a couple basic cake questions.
How far in advance can you decorate a cake?
Do you refrigerate your cake after decorating or leave it out in the box?

I agree with everyone else. Don't start decorating more than 2 days ahead of time because you risk your cake drying out. A tip from a fellow newcomer.... I always freeze my cakes the night before I ice them. I had such a hard time getting my icing smooth, and that really seemed to help.

Thanks for asking these questions. I was wondering the same thing, as I am going to make cupcakes for a birthday party and wasn't sure if they would still look nice 2 days later. I decided to wait. Tomorrow I'll bake them and Saturday I'll ice and decorate, I guess. I swear, I used to have a lot more confidence before coming to this site and now I'm a bid intimidated!! ![]()
