Some Cake Questions

I've just started cake decorating. I've been observing (watching FoodTV, surfing the internet) for awhile though. I just have a couple basic cake questions.

How far in advance can you decorate a cake?
Do you refrigerate your cake after decorating or leave it out in the box?

Welcome!
I wouldn't decorate more than a day or two ahead. You want them to have a nice fresh cake that will last a few days.

Only refrigerate if your ingredients require it (i.e. cream cheese)

I take 3 days. First Day, I make the icing and tint it if needed. Second day, bake, fill, and seal (crumb coat) in the morning, ice cake, then let dry overnight. Third day, the fun begins, DECORATE!

I agree with everyone else. Don't start decorating more than 2 days ahead of time because you risk your cake drying out. A tip from a fellow newcomer.... I always freeze my cakes the night before I ice them. I had such a hard time getting my icing smooth, and that really seemed to help.

Thanks for asking these questions. I was wondering the same thing, as I am going to make cupcakes for a birthday party and wasn't sure if they would still look nice 2 days later. I decided to wait. Tomorrow I'll bake them and Saturday I'll ice and decorate, I guess. I swear, I used to have a lot more confidence before coming to this site and now I'm a bid intimidated!! icon_redface.gif
