I just finished wilton 1 course and I would like to know of some other decorating icings that I could decorate with besides buttercreme. My instructor that I had stated that the wilton buttercreme is the only icing she uses since its the only one that will crust over and she could use for decorating.

So I would like to know of other icings that I could use for my cake and to decorate besides the wilton buttercreme if possible or are there some other great buttercreme recipes besides the wilton buttercreme.

Is it also possible to use any icing for decorating a cake and just add some merque powder so the cake could crust over and I could decorate it.

There are a lot of great buttercream recipes in the recipes section of this site (including mine!). The SMBC and IMBC do not crust. BTW, it is not the meringue powder, but the powdered sugar that causes the crusting.

Thank you so much. The reason I stated the merque powder because that was I was told by my teacher. (Sorry) I will go and check out other buttercreme icings....Thanks

When you are making your cake do you use buttercreme icing for all cakes that need to be decorated?

I make more fondant/MMF cakes than anything else..


You can decorate buttercream, ganache, poured fondant, MMF, reg fondant and royal icing.....it depends on yours or your customer's preference....all are fun to play with and you can find all the recipes in the recipe section here...icon_lol.gif

Now for non-crusting icings, here are a few really popular ones that are very yummy! They do not contain the shortening that some people find too greasy tasting..

I pretty much recommend trying different recipes to see what you like the best. Everyone has many different tastes and likes=) There is a great crusting cream cheese recipe too in the recipe section. Not your fault! Wilton does promote the meringue powder as being the reason, but I've made their basic buttercream w/o meringue powder plenty of times and it crusted just fine. IMHO, sounds to me like they are just trying to sell more of the meringue powder!

And I do mostly buttercream cakes. I make a variation on IMBC unless someone requests the Wilton buttercream. You can make a ton of different flavored buttercreams that will go with almost any cake!

I buy my icing...Dixie's Finest Whipped Icing. She taught me how to decorate, and until I tasted her icing, I didn't really care for cake. Now I LOVE cake (unfortunately for my waistline)! I've never tasted better icing, and it is a dream to decorate with. It doesn't crust, which I personally like.

Well thank you so much as I havent got that far yet to learning how to make royal and fondant, but I cant wait until I learn.
