Hello-
My neice's birthday is Saturday and my SIL asked me to make the cake. However, I'm leaving tomorrow on a flight at 6:00AM so I have to make and frost the cake tonight.
The cake is a doctored cake with BC frosting (butter only no shortening). My question is, will this be ok for Saturday? Is there anything special I should do for the cake to help keep it fresh?

A cake frosted in buttercream will keep at least 3-4 days in boxes on the counter. I always start on a cake on about Wednesday for a Saturday so I'm not so stressed out at the end.
