Royal Icing ???

I was wonderingif I can salvage RI that globs and strings every where? I added 1/2 tsp piping gel (maybe too much!) It flows right out of my tube with no pressure! icon_eek.gif

No. Your RI has broken down. Somehow you got grease into the recipe! RI & grease don't mix. You have to start all over. WASH EVERYTHING (mixer blades, bowl, measuring utensils etc.) in soapy hot water, rinse well and start again!

Thank-you! I washed everything with water and vinegar. I guess all the bc I make keeps everything well greased!

Another question. What speed and attachment do you use with your KA to make RI? Could overwhipping it break it down also?

Breakdown would have been caused by some grease somewhere.

I usually use disposable bags for piping royal icing to ensure there is no grease and wash everything (bowls, spatulas, tips) with warm soapy water. With the piping tips, I first soak them in boiling water after using them on buttercream.

You can make bc from the ruined icing just add shortening (1c). I have a feeling that you did not beat the icing long enough. You really need to mix on speed 3 for at least 7 min in a KA. Sometimes it looks like it is done before that for me. But if I go to use it, it melts. But since you add piping gel it won't help to rebeat now.

Thanks. I think I beat the RI on high with my KA! I tried it on a lower speed tonight, much better luck!
