Is there such a thing? My niece just graduated from college and is a TOTAL vegan- NO ANIMAL PRODUCTS AT ALL. She is animal rights activist and her mom asked me to maek her a yellow cake with chocolate icing- any recipes/suggestions out there??
My SIL says that if I can't find a recipe to just make my usual cake and my niece just won't eat any. Doesn't seem right not to have any of your own cake. Actaully seems like a sin to me. ![]()
ANy suggestions/help would be greatly appreciated- I think that I can use butter flavor crisco for the icing (won't taste the same but should work) it's the cake that is the issue.
I did a search on Google for vegan recipes and found a ton of websites that should help you. I even found a vegan yellow cake recipe. The website also has several recipes for vegan chocolate frosting.

I've found that when making "unusual" cakes like these or gluten free cakes, it's important to read the recipe reviews for tips, and that helps a lot.
I'm not sure exactly where you're located, but in Arizona we have several "health food" grocery stores that carry cake and cookie mixes for vegans. Sprouts and Whole Foods carry them and I think even Trader Joes might.

My son has multiple food allergies (including all milk products), so we tend to eat a Vegan diet out of default. I called Crisco about the butter flavor, and was told it was not dairy free. (This is often the case with butter flavor things--they are still made with the same products, but have a small enough amount to be called "butter flavor" because they don't have enough to legally be "butter").
Just an FYI. If your niece is that strict with her diet, technically there could be animal products in the Crisco. I'm not 100%, though.
What I do for icing is a confectioner's sugar glaze. When made thickly, it hardens nicely and can be painted on (slightly diluted Wilton food colorings and a soft brush). Use a light touch, though, or you'll get grooves in the icing (though that can be an effect if you want). It does limit what you can do decorating-wise, but you can tint the icing or flavor it, etc. Also, it is very, very sweet, so choose a basic/bland cake.
Sorry this doesn't help with a chocolate icing, but I'm sure your niece is used to making adjustments.
Or, use carob and melt it to make a ganache of sorts (carob and corn syrup and soy mik). You'll have to experiment for consistency/success, but it's another option.

It's the best one I've found so far. To make it yellow, just leave out the cocoa powder. I'm using that variation today for my DS's birthday cake and the trimmings are really good! The frosting will be a little more difficult. This recipe came up after I googled vegan frosting.

Guys- thanks so much not sure how I'll go with this one- afraid that no one else will eat the vegan cake so maybe I'll do a small one for her and then my regular cake for the rest of the family I'm going to go to the local health food store later this week and see what I can find- I'll check out the websites too. Knew I could count on you wonderfully resourceful people for help!
I haven't tried the frosting but for my niece's birthdays we all eat the wacky cake and it's pretty good. Not the best cake ever but still way better than you would expect.
