What are the general guide lines for freezing a wedding cake??

Are you talking about after it's iced and decorated? Or right after it's baked?

Baked,uniced cakes- I wrap in plastic wrap and place in in a larger plastic bag with a twist tie. Cakes are on a cake board for its size. Do not stack until after freezing.
Freezing the top tier to save for anniversary-freeze cake first-then wrap in plastic wrap or heavy duty aluminum foil and return to freezer. When thawing unwrap and let sit out.

And can you pour ganache on a squared off cake??

I have never had any problems with condensation. Make sure cake is completely thaw before icing and decorating.
