Icing you can make a couple weeks ahead of time from what I understand and then just rewhip it when you need it. As for cupcakes...do you have a big freezer? You can always freeze them and thaw them a day or two before.

Hi--You can freeze the cakes to ice later. Someone else can answer the icing question.
